Dog Bone Biscuits #2

Recipe:
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 c cornmeal
1 c grated Parmesan cheese
3/4 c vegetable oil -- melted meat or
bacon fat, drained oil from canned tuna
or a combination of fats
1/2 c. water or broth
Preheat oven to moderate 300 degrees. Combine flour, cornmeal, and cheese in medium-size bowl. Stir in oil until mixture is crumbly. Stir in water until well mixed. Roll dough out on lightly floured surface to 1/2 inch thickness. Use 4 or 5-inch dog-bone cookie cutter or large biscuit cutter to cut out biscuits.
Transfer to ungreased baking sheet. Press scraps together to cut out more biscuits. Bake for 45 minutes.
Transfer to rack to cool completely. Store biscuits in covered container in refrigerator. NOTE: For harder
biscuits; more like store-bought, omit oil or fat and increase water or broth to 1 cup. Stir in 1 egg with
liquid. Bake as above. Turn off oven, leaving biscuits in turned-off oven until completely cooled.
NOTES : Cornmeal gives these biscuits the crunch dogs love. Makes about 2 dozen large biscuits.
